This paper examines the importance of contingent data in the evaluation of sustainable new service development. This research seeks to discover the amount of food waste produced by a single managed catering business unit and show the usefulness of this data in measuring efficiency and effectiveness of its operations management. The secondary objective is to improve the methods used in the field of SNSD. Results indicate that empirical data analysis could be used as a driver of SNSD. Additionally, the research finds that measuring contingent operational performance and wastage streams can help organizations to meet their SNSD goals.</p> ER -
